Phnom Penh Noodle

  • 7 pieces of dried radish
  • 3/4 cup of dried shrimp
  • 1/2 cup of brown sugar
  • 3 tbsp salt
  • 5 tbsp fish sauce
  • 5 tbsp chicken mix
  • 1 pkg of beef ball
  • 3 chicken bone
  • 5 lb pork bone
  • 2 whole onion and garlic
  • 3 slices of dried squid
  1. In a large pot boil the pork and chicken
  2. Bone for 5 minutes.
  3. After 5 minutes wash the bones thoroughly, so we have a clear broth.
  4. Fill a large pot 3/4 of the way full a let it start to boil.
  5. Add in the washed bones
  6. Roast the garlic, onion, and squid for 7 minutes
  7. Add in the squid, onion, garlic, radish, shrimp, brown sugar, salt, fish sauce and chicken mix
  8. Give it a good mix and let it simmer for 40 minutes
This is an option slide topping
  • Coarsely mince the shrimp and pork 2 lb of each
  • Do not mince the shrimp too fine as you will not tasle the shrimp flavor
  • In shallow water add in 1/2 tsp of salt add in meat and stir for 1 minute
  • Drain the meat and we are done for the side topping
  1. After 40 minutes skim off the excess fat, do not cover as this will make the broth cloudy
  2. Then add in 2 pieces of boneless pork after the meat cooks we'll take it out.
  3. 10 minutes after adding water take out the chechin bones
  4. This is how the broth looks like after an hour of cooking
  5. Take out the boneless pork we will use this as a topping
  6. Add in the beef ball
  7. After adding in the beef balls wait 10 minutes and it ready to eat :)
  8. Garnish with coriander, green onion and lime
  9. You can add in the coriander root for more flavour.
  10. Optional meat toppings: pork liver & heart
  • Thin Rice noodles, you just need to soak for 5 minutes in cold water
  • Have a separate pot of boiling water to cook noodles and bean sprouts
  • Garnish with your favouite meat topping and enjoy :)
