Fresh Spring Roll and Fish Sauce

Ingredients for Rolls
  • Rice Paper (Dry or Fresh)
  • Shrimp
  • 1 1/2 tsp of salt (to cook the meat)
  • 1 package of vermicelli
  • Pork belly
  • Pork Shoulder
  • Lettuce
  • Bean sprouts
  • Mint and Cucumber
* The quantity depends on how many rolls you want to make
  1. Use 1 1/2 stp to cook the pork belly and pork shoulder, cook for 10 minutes
  2. Boil a pot of water and place the noodles in for 6 minutes, stir accasionally
  3. Wash with cold water and squeeze out excess water
  4. Please follow the directoins on the package yhou use it may vary
Ingredients for Dipping Sauce
  • 1 cup vinegar
  • 1 cup of fish sauce
  • 2 heaping cups of sugar
  • 4 cups of water (cold not warm)
  • 2 cloves of garlic
  • 6 chillies (depending on preference)
*The numbers apply to any cup or bowl that you use, notice we use the same cup to do all the measurements
  1. Add in the vinegar and fish sauce
  2. Then the sugar, and water
  3. Then mince the garlic, try not to turn it into a paste as it give a strong taste
  4. Slice the chillies on an angle, this gives the sauce a bit of spice -  mix the sauce well
  5. After the meat has been cooking for 8 minutes, add in the shrimp for 2 minutes
  6. Thinly slice the pork shaulder
  7. Slice the whole shrmp in half
  8. Trim off some of the excess fat then thinly slice the meat
  9. The fresh noodles are somethings hard to find but they are well worth it
  10. Now its all about placement

  12. In a small bowl add in hot water to dip the rice paper
  13. You only need to dip the paper very quickly or else its too soft to wrap
  14. The pink accessory can be found at any asian supermarket, it's not neccessary to have but it saves time
  15. This is the same concept as the fresh rice paper
