How to make Nam Chu - Sour Pork

  • 6 lb of ground pork or beef (beef has a firm texture)
  • 3 package of shredded pork rinds
  • 4 package of nam powder mix
  • 1/2 lb of garlic
  • 1 package of thai chilli pepper
  • 6 tbsp of sugar
  1. First, mix the meat with the pork rind
  2. Then add in half of the pepper and garlic mixture
  3. Then add in the other half and mix it well
  4. Then add in the nam mixture and mix well, make sure you move fast in order to prevent the meat from hardening
  5. Be sure to evenly mix in the engredient, we don't want to bite into a large chunk of garlic
  6. Once mixed place into a tray, pat in down make sure there is no free space.
  7. The "Nam" will be ready to eat within 24-48 hours (it will get sour by then)
