Ingredients: 
  • 5 cups sweet rice 
  • 1 1/2 cup sugar 
  • 8 oz coconut milk 
  • 1/2 teaspoon salt 
  • 4 ripe sweet mangoes 
Method
  1. Soak the rice for 4 to 5 hours.
  2. Cook rice with just 4 oz. of water. 
  3. Do not cover rice with water or it will get too sticky. 
  4. Cook for 20 minutes at low heat with cover, stir occasionally. 
  5. Combine coconut milk, sugar and salt. 
  6. Mix well.
  7. Add rice and stir until well blended. 
  8. Remove skin and slice mango, set aside 20 slices for garnish. 
  9. Cut other slices into bite-size pieces, stir into rice. 
  10. Garnish with 2 spices of mango and brown roasted mung beans.
