Fried Round Rice Flour Pancake (Nom Krok)

Nom Krok is a coconut pancake. It is a popular street food snack in Cambodia. It's fun and easy to make using a cast iron nom krok pan.
Ingredients needed in this recipe: 
  • Making 10 standard size Nom Krok
  • 1 cup coconut cream
  • 1/2 cup rice flour or (all purpous flour)
  • 1/2 cup glutinous rice flour (sweet rice flour) 
  • 1/4 teaspoon salt
  • 3 tablespoon sugar
  • Optional topping include thinly sliced scallion, coconut cream, pounded dry shrimps
  • Nom Krok pan
Let began making batter
  1. In a big bowl combined coconut cream, sugar and salt. 
  2. Mix thoroughly until sugar dissolved
  3. Heat pan on medium heat.
  4. Brush it with oil when pan is hot.
  5. Carefully pour batter into the slot leaving a little room on top of expansion
  6. Covered with lid and cook for about 6-8 minutes or when the cake turn slightly brown.
  7. Top it with more scallion or coconut cream
Enjoy it with sweet and sour fish sauce!
